Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh basil pesto
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0 to taste Salt and pepper
  • 0 optional Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the pesto, garlic powder, Italian seasoning, salt, and pepper.
  3. Add the chicken breasts to the bowl, coating each piece thoroughly with the pesto mixture. Let the chicken marinate for 15-20 minutes to enhance the flavor.
  4. Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken breasts and sear them for about 4-5 minutes per side until they are golden brown.
  5. Transfer the seared chicken breasts to a baking dish.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the chicken.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is bubbly and golden.
  8. Once done, remove from the oven and allow to cool for a few minutes. Serve warm, garnished with fresh basil leaves if desired.
