Ingredients

  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mild cheddar cheese
  • 0.5 cup cream cheese, softened
  • 0.5 cup milk (whole or 2%)
  • 1 tablespoon nutritional yeast
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 tablespoon butter

Instructions

  1. In a medium saucepan, combine the milk and cornstarch over medium heat. Whisk together until there are no lumps.
  2. Gradually stir in the softened cream cheese, continuing to whisk until it's completely melted and smooth.
  3. Add the nutritional yeast, garlic powder, onion powder, smoked paprika, and salt to the mixture. Stir well to combine.
  4. Gradually add the shredded sharp and mild cheddar cheeses, stirring continuously until they are fully melted and integrated into the sauce.
  5. Continue to heat the mixture, stirring frequently, until it reaches a creamy consistency. If the mixture is too thick, add a splash more milk to achieve your desired velvety texture.
  6. Once melted and smooth, remove the saucepan from heat and stir in the butter until it's fully melted and incorporated.
  7. Allow the cheese sauce to cool slightly before transferring it to an airtight container.
