Ingredients

  • 2 medium zucchinis, grated and excess moisture squeezed out
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup almond flour (or regular flour)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • for dipping Marinara sauce

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, almond flour, eggs, garlic powder, oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Spread the mixture onto the prepared baking sheet, forming a rectangle that is about 1/2 inch thick. Smooth out the surface with a spatula.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
  5. Once baked, remove from the oven and let cool for about 5 minutes. Use a sharp knife or pizza cutter to slice the bread into sticks.
  6. For extra cheesy goodness, sprinkle a little more mozzarella on top and return to the oven for an additional 5 minutes to melt.
  7. Serve warm with marinara sauce on the side for dipping.

💡 Chef's Notes

For extra cheesy goodness, add more mozzarella on top before the final bake.
