Ingredients

  • 1 cup rolled oats
  • 1 2 cup almond butter
  • 1 4 cup honey or maple syrup
  • 1 2 cup dried cherries, chopped
  • 1 3 cup dark chocolate chips
  • 1 2 teaspoon vanilla extract
  • 1 4 teaspoon sea salt
  • 1 tablespoon chia seeds (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and vanilla extract. Stir until well mixed.
  2. Add the chopped dried cherries, dark chocolate chips, sea salt, and chia seeds (if using) to the mixture. Fold everything together until evenly distributed.
  3. Once combined, refrigerate the mixture for about 30 minutes to allow it to firm up, making it easier to roll into balls.
  4. After chilling, use your hands to form small balls (about 1 inch in diameter) from the mixture. Place them on a parchment-lined baking sheet.
  5. Store the energy bites in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
