Ingredients

  • 3 pieces ripe bananas, mashed
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the melted butter to the bowl and mix until well combined.
  4. Stir in the brown sugar and granulated sugar until fully incorporated.
  5. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  6. Next, sift in the cocoa powder, baking soda, and salt, folding them carefully into the banana mixture.
  7. Gradually add the flour, mixing until just combined—avoid overmixing.
  8. Gently fold in the semi-sweet chocolate chips and walnuts, if using, until evenly distributed throughout the batter.
  9. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  10. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean (a few moist crumbs are okay).
  11. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
