Chicken and Broccoli Alfredo Roll-Ups: A Comforting Delight
Ingredients
- 2 large cooked chicken breasts, shredded
- 2 cups steamed broccoli florets, chopped
- 1 cup ricotta cheese
- 1 cup Alfredo sauce
- 1 teaspoon garlic powder
- 1 2 teaspoons onion powder
- to taste salt and pepper
- 8 large flour tortillas
- 1.5 cups shredded mozzarella cheese
- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, chopped broccoli, ricotta cheese, 1/2 cup of Alfredo sauce, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
- Lay a tortilla flat on a work surface. Spoon about 1/2 cup of the chicken and broccoli mixture onto the center of the tortilla.
- Roll the tortilla tightly, securing the filling inside. Place the roll-up seam side down in a greased baking dish. Repeat with the remaining tortillas and filling.
- Once all the roll-ups are in the dish, pour the remaining Alfredo sauce over the top, spreading it evenly.
- Sprinkle the shredded mozzarella cheese on top of the Alfredo sauce.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
- Let the roll-ups cool for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color.
