Chicken Avocado Melt Sandwich Irresistible Delight
Ingredients
- 2 slices whole-grain or sourdough bread
- 1 cup cooked chicken, shredded
- 1 ripe avocado, mashed
- 0.5 cup shredded mozzarella cheese
- 0.25 cup cherry tomatoes, halved
- 0.25 cup red onion, thinly sliced
- 1 tablespoon olive oil
- to taste salt and pepper
- for garnish fresh basil leaves (optional)
Instructions
- Preheat a skillet over medium heat and drizzle with olive oil.
- In a bowl, mix the shredded chicken with salt and pepper. Add the mashed avocado and stir until well combined.
- Place one slice of bread on the skillet and spread half of the chicken-avocado mixture evenly on top.
- Layer with shredded mozzarella cheese, halved cherry tomatoes, and thinly sliced red onions.
- Spread the remaining chicken-avocado mixture on the second slice of bread and place it on top of the sandwich (avocado side down).
- Grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and the cheese melts.
- After cooking, remove the sandwich from the skillet and let it sit for a minute before slicing in half.
- Garnish with fresh basil leaves if desired.
