Ingredients

  • 2 slices whole-grain or sourdough bread
  • 1 cup cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • for garnish fresh basil leaves (optional)

Instructions

  1. Preheat a skillet over medium heat and drizzle with olive oil.
  2. In a bowl, mix the shredded chicken with salt and pepper. Add the mashed avocado and stir until well combined.
  3. Place one slice of bread on the skillet and spread half of the chicken-avocado mixture evenly on top.
  4. Layer with shredded mozzarella cheese, halved cherry tomatoes, and thinly sliced red onions.
  5. Spread the remaining chicken-avocado mixture on the second slice of bread and place it on top of the sandwich (avocado side down).
  6. Grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and the cheese melts.
  7. After cooking, remove the sandwich from the skillet and let it sit for a minute before slicing in half.
  8. Garnish with fresh basil leaves if desired.
