Ingredients

  • 1 pound ground chicken
  • 1 cup finely chopped bell peppers (red, yellow, and green)
  • 0.5 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 package square wonton wrappers
  • 1 cup shredded cabbage
  • 0.25 cup cilantro, chopped
  • to taste lime wedges for serving
  • 0.33 cup mayonnaise mixed with 1 tablespoon sriracha for drizzling

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant.
  2. Add ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until fully cooked, and there’s no pink color.
  3. Mix in the bell peppers, green onions, soy sauce, and stir well. Cook for another 3-4 minutes until the vegetables are slightly softened. Remove from heat.
  4. To assemble the tacos, take one wonton wrapper, hold it in your hand and cup it to create a taco-like shape. Use a small spoonful of the chicken mixture to fill the wrapper.
  5. In a deep frying pan, heat oil to 350°F (175°C). Carefully fry filled wonton wrappers for about 1-2 minutes on each side until they are golden brown and crispy. Remove from oil and place on paper towels to drain excess oil.
  6. Once they’re finished, fill the fried wonton tacos with a handful of shredded cabbage. Drizzle spicy mayo on top and garnish with fresh cilantro.
  7. Serve with lime wedges on the side for an added zesty twist.
