Ingredients

  • 4 ears fresh corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 1 lime zest of
  • 2 limes juice of
  • to taste salt
  • for garnish fresh cilantro
  • optional Cotija cheese, crumbled

Instructions

  1. Preheat the grill to medium-high heat.
  2. Husk the corn and remove all silk threads. Rinse and pat dry.
  3. In a small bowl, whisk together olive oil, chili powder, smoked paprika, garlic powder, lime zest, lime juice, and salt until well combined.
  4. Brush the corn evenly with the chili lime mixture. Reserve some for basting while grilling.
  5. Place the corn directly on the grill grates and cook for about 15-20 minutes, turning every 3-5 minutes, until the kernels are charred and tender.
  6. During grilling, baste the corn occasionally with the reserved chili lime mixture for extra flavor.
  7. Once cooked, remove the corn from the grill and let it cool for a minute.
  8. Garnish with fresh cilantro and sprinkle with crumbled Cotija cheese if desired. Serve immediately.

💡 Chef's Notes

For extra flavor, baste the corn while grilling.
