Ingredients

  • 4 cups watermelon, cubed
  • 0.5 medium red onion, thinly sliced
  • 1 medium jalapeño, finely diced (seeds removed for less heat)
  • 0.25 cup fresh cilantro, chopped
  • 1 medium lime, juiced (about 2 tablespoons)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • optional feta cheese, crumbled (for garnish)
  • as needed lime wedges, for garnish

Instructions

  1. In a large mixing bowl, combine the cubed watermelon, sliced red onion, diced jalapeño, and chopped cilantro. Mix well to incorporate all the ingredients.
  2. In a small bowl, whisk together the lime juice, olive oil, chili powder, and a pinch of salt and pepper to create a dressing.
  3. Drizzle the dressing over the watermelon mixture and gently toss to coat, ensuring not to break apart the watermelon cubes.
  4. Taste and adjust seasoning if necessary, adding more lime juice, salt, or chili powder to suit your preference.
  5. Allow the salad to sit for about 10 minutes to let the flavors meld together.
  6. Serve the salad in a large bowl or on individual plates, garnished with crumbled feta cheese and lime wedges on the side for an extra zing.
