Ingredients
- 4 cups watermelon, cubed

- 2 tablespoons olive oil
- 1 teaspoon chili powder

Instructions
- In a large mixing bowl, combine the cubed watermelon, sliced red onion, diced jalapeño, and chopped cilantro. Mix well to incorporate all the ingredients.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, and a pinch of salt and pepper to create a dressing.
- Drizzle the dressing over the watermelon mixture and gently toss to coat, ensuring not to break apart the watermelon cubes.
- Taste and adjust seasoning if necessary, adding more lime juice, salt, or chili powder to suit your preference.
- Allow the salad to sit for about 10 minutes to let the flavors meld together.
