Chipotle Black Bean Burgers Flavorful and Simple Recipe
Ingredients
- 1 can black beans, drained and rinsed
- 1/2 cup cooked quinoa
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 pepper chipotle pepper in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 1 egg or flaxseed egg for a vegan option
- 2 tablespoons olive oil (for cooking)
- 1 package whole wheat burger buns
- as needed slices avocado, lettuce, and tomato for toppings
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Stir in the cooked quinoa, breadcrumbs, finely chopped onion, minced garlic, chipotle pepper, cumin, smoked paprika, salt, black pepper, and chopped cilantro until well combined.
- If using, add the egg to the mixture and combine until fully incorporated. If vegan, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water; allow it to sit for about 5 minutes to thicken, then add it to the mixture.
- Shape the mixture into patties, about 1/2 inch thick. You should get about 4-6 patties depending on size.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties carefully to the skillet.
- Cook for about 5-7 minutes on each side or until the patties are golden brown and heated through.
- Serve the burgers on whole wheat buns and top with avocado slices, lettuce, and tomato.
💡 Chef's Notes
For a vegan option, use a flaxseed egg instead of a regular egg.
