Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pepper chipotle pepper in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 egg or flaxseed egg for a vegan option
  • 2 tablespoons olive oil (for cooking)
  • 1 package whole wheat burger buns
  • as needed slices avocado, lettuce, and tomato for toppings

Instructions

  1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Stir in the cooked quinoa, breadcrumbs, finely chopped onion, minced garlic, chipotle pepper, cumin, smoked paprika, salt, black pepper, and chopped cilantro until well combined.
  3. If using, add the egg to the mixture and combine until fully incorporated. If vegan, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water; allow it to sit for about 5 minutes to thicken, then add it to the mixture.
  4. Shape the mixture into patties, about 1/2 inch thick. You should get about 4-6 patties depending on size.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties carefully to the skillet.
  6. Cook for about 5-7 minutes on each side or until the patties are golden brown and heated through.
  7. Serve the burgers on whole wheat buns and top with avocado slices, lettuce, and tomato.

💡 Chef's Notes

For a vegan option, use a flaxseed egg instead of a regular egg.
