Chocolate Chip Banana Bread Soft and Flavorful Loaf
Ingredients
- 3 pieces ripe bananas, mashed
- 1 third cup melted coconut oil
- 1 half cup brown sugar
- 1 quarter cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, beaten
- 1 teaspoon baking soda
- 1 half teaspoon salt
- 1 half cup all-purpose flour
- 1 half cup semi-sweet chocolate chips
- 1 half cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas and melted coconut oil until smooth and creamy.
- Add the brown sugar and granulated sugar, mixing until well incorporated.
- Stir in the beaten eggs and vanilla extract until fully blended.
- Sprinkle the baking soda and salt over the banana mixture, stirring to combine.
- Gently fold in the flour, being careful not to overmix; it’s okay if there are a few lumps.
- Finally, fold in the chocolate chips and chopped walnuts if using.
- Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
- Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
