Ingredients

  • 2 cups finely grated zucchini
  • 0.34 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg (optional)
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, and vegetable oil. Mix well until combined.
  3. Add in the eggs and vanilla extract. Stir until the mixture is smooth and well incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
  9. Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  10. Slice and serve as desired, warm or at room temperature.

Optional nuts can be added for extra crunch.
