Ingredients

  • 1.5 cups grated zucchini
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup walnuts or pecans, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy release.
  2. In a medium bowl, whisk together the grated zucchini, eggs, vegetable oil, and vanilla extract until well combined.
  3. In a large bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and cinnamon. Stir until evenly mixed.
  4. Make a well in the center of the dry ingredients and pour in the zucchini mixture. Gently fold the ingredients together until just combined, being careful not to overmix.
  5. Add the chocolate chips and, if using, the chopped nuts. Gently fold them into the batter until evenly distributed.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, you can cover it loosely with foil for the last 10-15 minutes.
  8. Once baked, remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
