Chocolate Chip Zucchini Bread Tasty and Simple Recipe
Ingredients
- 1.5 cups grated zucchini
- 1 cup all-purpose flour
- 0.5 cup whole wheat flour
- 1 cup granulated sugar
- 0.5 cup packed brown sugar
- 2 large eggs
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup semi-sweet chocolate chips
- 0.5 cup walnuts or pecans, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy release.
- In a medium bowl, whisk together the grated zucchini, eggs, vegetable oil, and vanilla extract until well combined.
- In a large bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and cinnamon. Stir until evenly mixed.
- Make a well in the center of the dry ingredients and pour in the zucchini mixture. Gently fold the ingredients together until just combined, being careful not to overmix.
- Add the chocolate chips and, if using, the chopped nuts. Gently fold them into the batter until evenly distributed.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, you can cover it loosely with foil for the last 10-15 minutes.
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
