Ingredients

  • 3 whole ripe kiwis, peeled and cut into thick slices

  • 1 2 cup crushed nuts (almonds, hazelnuts, or walnuts)
  • 1 4 cup desiccated coconut (optional)
  • 10 sticks wooden popsicle sticks

Instructions

  1. Prepare the Kiwi Slices: After peeling and slicing the kiwis, pat them dry with a paper towel to remove excess moisture.
  2. Insert Sticks: Take your popsicle sticks and gently insert one into the end of each kiwi slice, ensuring they are secure enough to hold.
  3. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between until the chocolate is fully melted and smooth. Be careful not to overheat.
  4. Dip the Kiwi Pops: Hold each kiwi pop by the stick and dip it into the melted chocolate, ensuring it is fully coated. Let the excess chocolate drip back into the bowl.
  5. Add Toppings: Immediately roll or sprinkle the warm chocolate-covered kiwi in the crushed nuts or desiccated coconut, if desired.
  6. Set the Pops: Place the coated kiwi pops on a parchment-lined baking sheet. Repeat the dipping and topping process for all kiwi slices.
  7. Chill and Set: Once all the pops are coated, place the baking sheet in the refrigerator for about 30 minutes or until the chocolate is fully set.
  8. Serve: Remove from the refrigerator, and your delicious Chocolate Covered Kiwi Pops are ready to be enjoyed!
