Ingredients

  • 2 whole ripe bananas
  • 0.5 cup creamy peanut butter
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • 0.25 cup chopped nuts (e.g., almonds or walnuts)
  • to taste pinch sea salt for sprinkling

Instructions

  1. Peel the bananas and slice them into 1/2-inch thick rounds.
  2. Scoop about 1 teaspoon of peanut butter onto half of the banana slices. Top with the remaining banana slices to create little sandwiches.
  3. Set the banana sandwiches on a baking sheet lined with parchment paper. Place them in the freezer for about 15-20 minutes or until firm.
  4. Meanwhile, in a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
  5. Dip each frozen banana sandwich halfway into the melted chocolate, allowing any excess chocolate to drip off.
  6. Place the chocolate-covered banana bites back onto the parchment paper.
  7. Before the chocolate hardens, sprinkle the chopped nuts and a pinch of sea salt over the top of each bite for added crunch and flavor.
  8. Once all bites are coated, return them to the freezer for another 10-15 minutes to set the chocolate completely.

💡 Chef's Notes

Arrange the chocolate-covered banana bites on a decorative plate and serve them with fresh banana slices and a drizzle of remaining melted chocolate on the side for added flair.
