Ingredients

  • 3 pieces ripe bananas, mashed
  • 0.5 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chocolate chips (dark or semi-sweet)
  • 0.25 cup chopped peanuts (optional, for added crunch)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easier removal.
  2. In a large mixing bowl, combine the mashed bananas and peanut butter, mixing until smooth.
  3. Add the granulated sugar and brown sugar to the banana mixture, stirring until well blended.
  4. Crack the eggs into the mixture and pour in the vanilla extract; mix until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, folding gently until just combined.
  6. Carefully fold in the chocolate chips and chopped peanuts if using, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
