Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup creamy peanut butter
  • 1 tablespoon powdered sugar (for dusting)
  • 1 scoop vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and grease four ramekins with butter and light dusting of flour. Place them on a baking tray.
  2. In a medium saucepan over low heat, melt the butter and semi-sweet chocolate chips together, stirring continuously until smooth. Remove from heat and allow to cool slightly.
  3. In a large mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is thick and pale.
  4. Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly until fully combined.
  5. Sift in the all-purpose flour and salt, then gently fold until just combined.
  6. Pour half of the cake batter into the prepared ramekins.
  7. In the center of each ramekin, place 1 tablespoon of creamy peanut butter, then spoon the remaining batter on top to cover the peanut butter completely.
  8. Bake in the preheated oven for about 12-14 minutes, until the edges are firm but the center is still soft.
  9. Let the cakes cool for 1 minute, then gently run a knife around the edges, invert onto plates, and let them release from the ramekins.
  10. Dust with powdered sugar and serve immediately, optionally accompanied by a scoop of vanilla ice cream.
