Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter (or peanut butter)
  • 0.5 cup finely chopped dried apples
  • 0.25 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup chopped walnuts or pecans (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, chopped dried apples, honey (or maple syrup), ground cinnamon, and salt.
  2. If using, add the chopped walnuts or pecans and chia seeds into the mixture for extra crunch and nutrition.
  3. Mix all the ingredients thoroughly until they form a sticky and cohesive dough.
  4. Use your hands to scoop out about 1 tablespoon of the dough and roll it into a ball. Repeat until all the mixture is rolled into energy balls.
  5. Place the balls onto a parchment-lined plate or tray, and refrigerate for at least 30 minutes to firm up.
  6. Store the energy balls in an airtight container in the fridge for up to a week.
