Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup buttermilk (or milk with 1 tbsp lemon juice)
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 3 tablespoons melted butter
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper, allowing some overhang for easy removal.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract, stirring until smooth.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined - be careful not to overmix.
  5. In a small bowl, combine the brown sugar and ground cinnamon for the swirl.
  6. Spread half of the cake batter into the prepared baking pan, smoothing it out evenly. Then, sprinkle half of the cinnamon-sugar mixture over the layer of batter.
  7. Carefully spoon the remaining batter on top and smooth it out. Finally, sprinkle the rest of the cinnamon-sugar mixture over the top layer. Use a toothpick or knife to swirl the mixture through the batter gently.
  8. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth and drizzleable.
  10. Once the cake is done, allow it to cool in the pan for about 10 minutes. Then, remove it from the pan and allow it to cool completely on a wire rack.
  11. Drizzle the glaze over the cooled cake just before serving.

Serve the cake in squares, garnished with a light sprinkle of extra cinnamon or a dusting of powdered sugar. Pair with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat!
