Cinnamon Roll Cake Irresistible Sweet Delight
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup buttermilk (or milk with 1 tbsp lemon juice)
- 0.5 cup unsalted butter, melted
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 0.5 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 3 tablespoons melted butter
- 1 cup powdered sugar
- 2 tablespoons milk
- 0.5 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper, allowing some overhang for easy removal.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract, stirring until smooth.
- Pour the wet ingredients into the dry ingredients, mixing until just combined - be careful not to overmix.
- In a small bowl, combine the brown sugar and ground cinnamon for the swirl.
- Spread half of the cake batter into the prepared baking pan, smoothing it out evenly. Then, sprinkle half of the cinnamon-sugar mixture over the layer of batter.
- Carefully spoon the remaining batter on top and smooth it out. Finally, sprinkle the rest of the cinnamon-sugar mixture over the top layer. Use a toothpick or knife to swirl the mixture through the batter gently.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth and drizzleable.
- Once the cake is done, allow it to cool in the pan for about 10 minutes. Then, remove it from the pan and allow it to cool completely on a wire rack.
- Drizzle the glaze over the cooled cake just before serving.
💡 Chef's Notes
Serve the cake in squares, garnished with a light sprinkle of extra cinnamon or a dusting of powdered sugar. Pair with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat!
