Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup
  • 1 4 cup Greek yogurt
  • 2 tablespoons chopped walnuts
  • 2 tablespoons raisins or currants
  • 0 to taste additional cinnamon and chopped nuts for topping

Instructions

  1. In a medium mixing bowl, combine the rolled oats, chia seeds, and ground cinnamon. Stir well to mix the dry ingredients evenly.
  2. In another bowl or measuring cup, whisk together the almond milk, vanilla extract, maple syrup, and Greek yogurt until fully combined.
  3. Pour the wet mixture over the dry ingredients and stir until everything is well-coated.
  4. If adding, fold in the chopped walnuts and raisins or currants to the mixture.
  5. Divide the oat mixture evenly into two or three containers, jars, or bowls with lids.
  6. Cover and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
  7. In the morning, give the oats a good stir. Adjust the consistency with a little more almond milk if desired.
  8. Top with additional cinnamon and chopped nuts before serving for added flavor and crunch.

💡 Chef's Notes

Serve the oats in clear jars to showcase the layers, and top with a swirl of yogurt and a sprinkle of cinnamon for a beautiful finish.
