Ingredients

  • 1 cup warm water (110°F)
  • 2 tablespoons granulated sugar
  • 2 teaspoons active dry yeast
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 0.25 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • 0.5 cup unsalted butter, melted
  • 0.5 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon

Instructions

  1. In a small bowl, combine warm water, 2 tablespoons of sugar, and yeast. Allow to sit for 5-10 minutes, until foamy.
  2. In a large mixing bowl, combine flour and salt. Pour in the yeast mixture once it is foamy. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth. Place in a greased bowl, cover, and let rise for 1 hour in a warm spot or until doubled in size.
  4. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. In a pot, bring about 8 cups of water to a simmer and add the baking soda.
  6. Once the dough has risen, turn it out onto a floured surface and divide it into small pieces (about 1-inch chunks). Roll each piece into a ball and shape into a pretzel bite.
  7. Boil each pretzel bite in the baking soda solution for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
  8. Brush each pretzel bite with the beaten egg.
  9. In a separate bowl, mix together the 1/2 cup sugar and cinnamon. After brushing the pretzel bites, sprinkle the cinnamon sugar mixture over them generously.
  10. Bake in the preheated oven for 12-15 minutes or until golden brown.
  11. Remove from the oven and brush immediately with melted butter for extra richness and flavor.
  12. Allow to cool slightly before serving.
