Ingredients

  • 6 medium apples (such as Granny Smith and Honeycrisp), peeled and sliced
  • 0.75 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon all-purpose flour (for thickening)
  • 1 tablespoon butter, cut into small pieces
  • 1 egg (for egg wash)
  • 1 package (14 oz) refrigerated pie crusts (or homemade, if preferred)
  • 1 pinch of salt

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to preheat.
  2. Prepare the Filling: In a large bowl, combine the sliced apples, sugar, cinnamon, nutmeg, lemon juice, flour, and salt. Toss until the apples are evenly coated. Set aside to let the mixture marinate for about 15 minutes.
  3. Roll out the Dough: If using refrigerated pie crusts, unroll one pie crust into a 9-inch pie dish. Press it gently to fit the dish without stretching.
  4. Add the Filling: Pour the apple mixture into the pie crust, spreading it evenly. Dot the top with small pieces of butter.
  5. Top with Crust: Unroll the second pie crust and place it over the apple filling. Cut slits in the top crust to allow steam to escape. You can also create decorative shapes or a lattice pattern with the dough if you're feeling creative.
  6. Egg Wash: Beat the egg in a small bowl and brush it over the crust to give it a nice golden color when baked.
  7. Bake: Place the pie in the preheated oven and bake for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for an additional 35-45 minutes, until the apples are tender and the crust is golden brown.
  8. Cool and Serve: Once baked, let the pie cool for at least 30 minutes to allow the filling to set. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
