Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 3 tablespoons balsamic glaze
  • 1 tablespoon balsamic vinegar (optional for additional flavor)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown.
  4. Once the chicken is seared, remove the skillet from heat and top each breast with a few slices of fresh mozzarella cheese.
  5. Scatter the halved cherry tomatoes around the chicken in the skillet. Drizzle the balsamic glaze over the chicken and tomatoes, and if desired, add balsamic vinegar for an extra kick.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and let the dish rest for 5 minutes. Garnish with fresh basil leaves before serving.

💡 Chef's Notes

Serve the Caprese Chicken directly from the skillet for a rustic look, or plate alongside a bed of fresh mixed greens. Drizzle any remaining balsamic glaze over the top and garnish with additional basil for a vibrant finish.
