Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 0.5 cup red bell pepper, thinly sliced
  • 0.5 cup green onions, chopped
  • 0.25 cup fresh cilantro, chopped (optional)
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0 to taste salt and pepper

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, grated carrots, sliced red bell pepper, green onions, and cilantro. Toss them together until evenly mixed.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the cabbage mixture and toss everything together until the vegetables are well coated with the dressing.
  4. Taste and adjust seasoning if necessary. You may want to add more salt or pepper according to your preference.
  5. Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld and the cabbage to soften slightly.
  6. Just before serving, give the coleslaw a good toss again to redistribute the dressing.

Serve in a decorative bowl and garnish with fresh cilantro or bell pepper slices for added color.
