Ingredients

  • 2 whole ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 0.25 cup honey or maple syrup
  • 0.5 teaspoon vanilla extract
  • 1 whole lime, juiced
  • 1 pinch salt

Instructions

  1. In a blender, combine the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and salt.
  2. Blend on high until the mixture is smooth and creamy, scraping down the sides if necessary.
  3. Taste the mixture and adjust sweetness if desired by adding more honey or syrup.
  4. Pour the blended mixture into popsicle molds, leaving a small space at the top for expansion as they freeze.
  5. Insert sticks into the molds and place them in the freezer.
  6. Freeze for at least 4-6 hours, or until completely solid.
  7. To release the popsicles, run warm water over the outside of the molds for a few seconds until they slide out easily.

💡 Chef's Notes

Adjust sweetness to your preference by adding more honey or syrup.
