Coconut Mango Popsicles Refreshing Summer Treat
Ingredients
- 2 whole ripe mangoes, peeled and diced
- 1 cup coconut milk
- 0.25 cup honey or maple syrup
- 0.5 teaspoon vanilla extract
- 1 whole lime, juiced
- 1 pinch salt
Instructions
- In a blender, combine the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and salt.
- Blend on high until the mixture is smooth and creamy, scraping down the sides if necessary.
- Taste the mixture and adjust sweetness if desired by adding more honey or syrup.
- Pour the blended mixture into popsicle molds, leaving a small space at the top for expansion as they freeze.
- Insert sticks into the molds and place them in the freezer.
- Freeze for at least 4-6 hours, or until completely solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds until they slide out easily.
