Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 1 zest lime
  • 2 tablespoons fresh lime juice
  • 0.25 cup fresh cilantro, chopped
  • to taste freshly ground black pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add the rinsed rice to the saucepan and stir for 1-2 minutes, allowing the rice to lightly toast in the oil and garlic.
  4. Carefully pour in the vegetable broth and add the salt. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-18 minutes, or until the rice is tender and all the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for an additional 5 minutes to steam the rice.
  7. Fluff the rice with a fork, then gently mix in the lime zest, lime juice, and chopped cilantro. Season with freshly ground black pepper to taste.
  8. Serve immediately as a flavorful side dish or as a base for your favorite protein.
