Ingredients

  • 1 pound ground beef or turkey
  • 1 unit onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • to taste unit Salt and pepper
  • 4 large russet potatoes, peeled and cubed
  • 0.5 cup milk
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • for garnish unit Fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until tender. Drain and return to the pot.
  3. Add the milk and butter to the potatoes. Mash them until creamy and season with salt and pepper to taste. Set aside.
  4. In a large skillet over medium heat, add the ground beef or turkey, onion, and garlic. Cook until the meat is browned and the onion is translucent, about 7-10 minutes.
  5. Stir in the mixed vegetables, dried thyme, Worcestershire sauce, and season with salt and pepper. Cook for an additional 5 minutes until the vegetables are heated through.
  6. In a greased 9x13 inch baking dish, spread the meat and vegetable mixture evenly across the bottom. Top with the mashed potatoes, smoothing them out with a spatula.
  7. Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.
  8. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
