Ingredients

  • 2 pounds chicken breast, cut into 1-inch cubes
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • ¼ cup olive oil
  • ¼ cup melted unsalted butter
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • to taste fresh herbs (parsley and chives), for garnish
  • wooden skewers (soaked in water for 30 minutes)

Instructions

  1. In a large mixing bowl, combine the olive oil, melted butter, Worcestershire sauce, Dijon mustard, lemon juice, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Whisk until smooth.
  2. Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.
  3. Preheat your grill to medium-high heat (about 400°F or 200°C). If using an oven, preheat it to 425°F (218°C).
  4. Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning every few minutes, until the chicken is cooked through and has nice grill marks. To check doneness, the internal temperature should reach 165°F (75°C).
  6. Once cooked, remove the skewers from the grill. Let them rest for a couple of minutes.
  7. Sprinkle freshly chopped herbs (parsley and chives) over the skewers for a pop of color and added freshness.

💡 Chef's Notes

Serve with lemon wedges and a small bowl of leftover cowboy butter for dipping.
