Ingredients

  • 1 large loaf rustic sourdough bread
  • 0.5 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • to taste salt and pepper
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened butter, minced garlic, chopped parsley, chopped chives, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix until all ingredients are well blended.
  3. Cut the sourdough bread in half lengthwise, creating two equal pieces.
  4. Generously spread the cowboy butter mixture over the cut sides of the bread. Use a spatula or knife to ensure an even coating.
  5. Place the buttered bread halves on a baking sheet, cut side up.
  6. Sprinkle the grated Parmesan and shredded mozzarella cheese evenly over the buttered surfaces.
  7. Bake in the preheated oven for about 15-20 minutes, or until the edges are golden and the cheese is bubbly and starting to brown.
  8. Remove the bread from the oven and let it cool for a couple of minutes before cutting.

💡 Chef's Notes

Arrange the garlic bread on a wooden board, garnished with additional chopped parsley or chives for a rustic look. Serve with a side of marinara sauce for dipping. Enjoy!
