Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup cream cheese, softened
  • 1 2 diced onion
  • 1 4 diced bell pepper (red or green)
  • 1 whole jalapeño, finely chopped (optional for extra heat)
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • to taste salt and pepper
  • for serving tortilla chips or sliced fresh vegetables

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion, bell pepper, and jalapeño (if using) to the skillet. Sauté until softened, about 3-4 minutes.
  3. Stir in the minced garlic and taco seasoning, and cook for another minute until fragrant.
  4. Add the diced tomatoes with green chilies, black beans, and corn. Mix well to combine.
  5. Lower the heat, and add the cream cheese and shredded cheddar cheese to the skillet. Stir continuously until the cheeses are melted and the mixture is creamy and smooth.
  6. Season with salt and pepper to taste. If the queso is too thick, you can thin it out with a little warm water or milk.
  7. Remove from heat and serve hot with tortilla chips or sliced vegetables for dipping.

Serve in a warm, rustic bowl and garnish with fresh cilantro and jalapeño slices.
