Cowboy Queso Recipe Creamy and Flavorful Delight
Ingredients
- 1 lb ground beef
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup sharp cheddar cheese, shredded
- 1 cup cream cheese, softened
- 1 2 diced onion
- 1 4 diced bell pepper (red or green)
- 1 whole jalapeño, finely chopped (optional for extra heat)
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- to taste salt and pepper
- for serving tortilla chips or sliced fresh vegetables
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, bell pepper, and jalapeño (if using) to the skillet. Sauté until softened, about 3-4 minutes.
- Stir in the minced garlic and taco seasoning, and cook for another minute until fragrant.
- Add the diced tomatoes with green chilies, black beans, and corn. Mix well to combine.
- Lower the heat, and add the cream cheese and shredded cheddar cheese to the skillet. Stir continuously until the cheeses are melted and the mixture is creamy and smooth.
- Season with salt and pepper to taste. If the queso is too thick, you can thin it out with a little warm water or milk.
- Remove from heat and serve hot with tortilla chips or sliced vegetables for dipping.
