Ingredients

  • 32 oz frozen tater tots
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon (or sausage)
  • 0.5 cup diced green onions
  • 0.5 teaspoon garlic powder
  • to taste salt and pepper
  • optional Sriracha or hot sauce for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Grease a 9x13-inch baking dish or casserole dish with non-stick spray.
  2. Spread the frozen tater tots evenly in the bottom of the prepared baking dish.
  3. In a large mixing bowl, whisk together the eggs and milk until well combined. Add the garlic powder, salt, and pepper.
  4. Stir in the crumbled bacon (or sausage), shredded cheddar cheese, and half of the diced green onions into the egg mixture.
  5. Pour the egg mixture over the tater tots in the baking dish, ensuring it's evenly distributed.
  6. Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before slicing into squares.
  8. Serve warm, garnished with the remaining diced green onions and a drizzle of Sriracha or your favorite hot sauce if desired.

💡 Chef's Notes

Serve warm directly from the baking dish or individually plated with extra green onions.
