Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.33 cup honey or maple syrup
  • 0.5 cup dried cranberries, chopped
  • 0.5 cup almonds, chopped
  • 0.25 cup chia seeds
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, and honey or maple syrup. Mix until well combined and smooth.
  2. Add the chopped dried cranberries, chopped almonds, chia seeds, vanilla extract, and a pinch of salt to the bowl. Stir until all ingredients are evenly mixed.
  3. Place the mixture in the refrigerator for about 15-30 minutes, allowing it to firm up for easier handling.
  4. Once chilled, take small amounts of the mixture and roll them into bite-sized balls, roughly 1 inch in diameter.
  5. If desired, roll the energy bites in extra chopped almonds or coconut flakes for added texture and flavor.
  6. Store the energy bites in an airtight container in the refrigerator for up to one week.
