Ingredients

  • 2 pieces boneless, skinless chicken breasts, diced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 piece bell pepper (red or yellow), diced
  • 8 ounces fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese

  • for garnish Fresh parsley, chopped

Instructions

  1. Begin by cooking the pasta according to package instructions. Drain and set aside, tossing it with a drizzle of olive oil to prevent sticking.
  2. In a bowl, toss the diced chicken breasts with Cajun seasoning, coating them evenly.
  3. In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken and cook for about 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  4. In the same skillet, add chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.
  5. Return the cooked chicken to the skillet and pour in the chicken broth. Bring it to a gentle simmer.
  6. Stir in the heavy cream and let it simmer for about 3-4 minutes until it thickens slightly.
  7. Add the grated Parmesan cheese to the mixture, stirring until melted and creamy. Taste and season with salt and pepper as needed.
  8. Finally, add the cooked pasta to the skillet, tossing it with the sauce until well combined and heated through.

Serve the pasta in large bowls, garnished with fresh parsley and extra Parmesan cheese on top for a beautiful finish.
