Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 2 pounds russet potatoes, peeled and cubed
  • 0.5 cup milk (or more as needed)
  • 2 tablespoons sour cream
  • 0.5 teaspoon garlic powder
  • to taste salt

Instructions

  1. Place the cubed potatoes into a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.
  2. Add milk, sour cream, garlic powder, and salt to the drained potatoes. Mash until smooth and creamy. Adjust the consistency with more milk if needed. Set aside and keep warm.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the steak pieces with salt, pepper, and paprika. Add the steak bites to the skillet in a single layer (work in batches if needed) and sear for 2-3 minutes on each side until golden brown. Remove the steak from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the fresh thyme and cook for another minute.
  5. Pour in the heavy cream and Worcestershire sauce, stirring well to combine. Let the sauce simmer for about 2-3 minutes until it thickens slightly. Return the cooked steak bites to the skillet and toss to coat in the creamy garlic sauce.
  6. Serve the creamy garlic butter steak bites over a generous scoop of mashed potatoes. Drizzle any remaining sauce over the top and garnish with chopped parsley.

💡 Chef's Notes

Adjust the consistency of the mashed potatoes with more milk if needed.
