Ingredients

  • 2 pounds russet potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 0.5 cup cream cheese, softened
  • 0.5 cup whole milk
  • 4 tablespoons unsalted butter
  • to taste salt and pepper
  • for garnish fresh chives, chopped

Instructions

  1. Place the peeled and cubed potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes or until the potatoes are tender and easily pierced with a fork.
  3. While the potatoes are cooking, in a small saucepan over low heat, melt the butter and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
  4. Drain the cooked potatoes and return them to the pot. Add the sautéed garlic and butter, cream cheese, and milk to the pot.
  5. Using a potato masher, mash the mixture until smooth and creamy. Adjust the consistency with additional milk if desired, and season with salt and pepper to taste.
  6. Once fully combined, transfer the mashed potatoes to a serving bowl and sprinkle with freshly chopped chives for garnish.
