Ingredients

  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup cream cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 0.5 teaspoon onion powder
  • 0 Salt and pepper to taste
  • 1 zest lemon
  • 0 Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, bring water to a boil and cook the orzo pasta according to package instructions until al dente. Drain and set aside.
  2. In the same saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the chopped spinach and sauté until wilted, about 2-3 minutes.
  4. Pour in the vegetable broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
  5. Add the cooked orzo back into the saucepan, followed by the Parmesan cheese and cream cheese. Stir until everything is well combined and creamy.
  6. Season with onion powder, salt, pepper, and lemon zest. Allow the mixture to simmer for an additional 2-3 minutes until heated through.
  7. Remove from heat and serve immediately, garnished with chopped fresh parsley.
