Ingredients

  • 20 large pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 0.5 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • for garnish fresh basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
  5. In a large mixing bowl, combine ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well.
  6. Add the wilted spinach mixture to the cheese mixture and stir until fully combined.
  7. Stuff each pasta shell with about 2 tablespoons of the creamy spinach mixture. Place the filled shells in a baking dish.
  8. Spread half of the marinara sauce evenly over the stuffed shells.
  9. Pour the remaining marinara sauce over the shells, then sprinkle the remaining mozzarella cheese on top.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  11. Let cool for a few minutes before serving. Garnish with fresh basil.
