Ingredients

  • 2 cups fresh corn kernels (or 1 can of corn, drained)
  • 1 cup all-purpose flour
  • 0.5 cup grated cheddar cheese
  • 0.25 cup chopped green onions
  • 0.25 cup red bell pepper, finely diced
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon baking powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • to taste salt and pepper

Instructions

  1. In a large mixing bowl, combine the corn kernels, flour, grated cheddar cheese, chopped green onions, and diced red bell pepper.
  2. In a separate bowl, whisk together the eggs and milk until well combined.
  3. Pour the egg mixture into the bowl with the dry ingredients, then add baking powder, garlic powder, paprika, salt, and pepper. Stir until just combined. Be careful not to overmix; some lumps are okay.
  4. Heat about 1/4 inch of oil in a large frying pan over medium heat.
  5. Once the oil is hot, drop spoonfuls of the corn batter into the pan, flattening them slightly with the back of the spoon to form fritters.
  6. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan, frying in batches if necessary.
  7. Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
  8. Serve hot, garnished with extra green onions or a dollop of sour cream if desired.

Stack the fritters on a serving platter and sprinkle with fresh herbs for a pop of color. Consider serving with a homemade dipping sauce like spicy aioli or salsa for added flavor.
