Crispy Cheesy Corn Fritters: A Delightful Dish for Every Occasion
Ingredients
- 2 cups fresh corn kernels (or 1 can of corn, drained)
- 1 cup all-purpose flour
- 0.5 cup grated cheddar cheese
- 0.25 cup chopped green onions
- 0.25 cup red bell pepper, finely diced
- 2 large eggs
- 0.5 cup milk
- 1 teaspoon baking powder
- 0.5 teaspoon garlic powder
- 0.5 teaspoon paprika
- to taste salt and pepper
- as needed oil for frying
Instructions
- In a large mixing bowl, combine the corn kernels, flour, grated cheddar cheese, chopped green onions, and diced red bell pepper.
- In a separate bowl, whisk together the eggs and milk until well combined.
- Pour the egg mixture into the bowl with the dry ingredients, then add baking powder, garlic powder, paprika, salt, and pepper. Stir until just combined. Be careful not to overmix; some lumps are okay.
- Heat about 1/4 inch of oil in a large frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the corn batter into the pan, flattening them slightly with the back of the spoon to form fritters.
- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan, frying in batches if necessary.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
- Serve hot, garnished with extra green onions or a dollop of sour cream if desired.
💡 Chef's Notes
Stack the fritters on a serving platter and sprinkle with fresh herbs for a pop of color. Consider serving with a homemade dipping sauce like spicy aioli or salsa for added flavor.
