Ingredients

  • 2 large onions, sliced into 1/4-inch rings
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 2 smoked paprika
  • 1 2 garlic powder
  • 1 2 cayenne pepper (adjust for spice)
  • 1 cup buttermilk (or milk mixed with lemon juice)
  • 1 cup breadcrumbs (panko for extra crunch)
  • to taste salt and pepper
  • as needed vegetable oil, for frying

Instructions

  1. Carefully peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.
  2. In a large bowl, combine the flour, baking powder, smoked paprika, garlic powder, cayenne, salt, and pepper. Whisk until evenly mixed.
  3. In another bowl, pour the buttermilk (or milk with lemon juice).
  4. Dip each onion ring first into the buttermilk, allowing any excess to drip off, then dredge it in the flour mixture, ensuring it's evenly coated. Shake off any excess flour.
  5. Once coated in flour, dip the onion ring back into the buttermilk, then roll it through the breadcrumbs, pressing gently to help them adhere.
  6. In a large, deep pot or frying pan, heat vegetable oil over medium-high heat (enough to submerge the rings). Once hot, carefully add a few onion rings at a time, without overcrowding the pan. Fry until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
  7. While still warm, season the crispy onion rings with a pinch of salt.
