Ingredients

  • 2 cups mashed potatoes (preferably leftover)
  • 1 cup grated Parmesan cheese
  • 1 2 all-purpose flour
  • 1 clove garlic, minced
  • 1 4 fresh parsley, chopped
  • 1 teaspoon onion powder
  • 1 2 black pepper
  • 1 2 salt
  • 2 eggs beaten
  • 1 cup breadcrumbs (preferably panko)
  • to taste Vegetable oil, for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, Parmesan cheese, minced garlic, chopped parsley, onion powder, black pepper, and salt. Mix until all ingredients are well combined.
  2. Take a small amount of the potato mixture and form it into a ball, about 1 inch in diameter. Repeat with the remaining mixture, placing the balls on a baking sheet. You should have about 20-25 balls.
  3. Set up a breading station by placing the all-purpose flour, beaten eggs, and breadcrumbs in separate shallow bowls.
  4. Roll each potato ball in flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it is well coated. Finally, roll it in the breadcrumbs until fully covered.
  5. Heat vegetable oil in a deep pan or fryer until it reaches 350°F (175°C). Carefully place a few potato balls in the hot oil at a time, making sure not to overcrowd the pan. Fry for 4-5 minutes or until they are golden brown and crispy.
  6. Using a slotted spoon, remove the potato balls and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the Crispy Parmesan Garlic Potato Balls hot, garnished with extra parsley or Parmesan cheese if desired.
