Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon dried oregano

  • 0.25 cup grated Parmesan cheese
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the potatoes thoroughly. Cut each potato in half lengthwise, then each half into 4-6 wedges, depending on your preferred thickness.
  3. In a large bowl, toss the potato wedges with olive oil until they are evenly coated.
  4. In a separate bowl, mix together the garlic powder, onion powder, smoked paprika, cayenne pepper, oregano, salt, and pepper.
  5. Sprinkle the spice mixture over the potato wedges and toss again to ensure the wedges are evenly coated with the spices.
  6. Arrange the wedges in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
  7. Bake in the preheated oven for 25-30 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
  8. If using, sprinkle grated Parmesan cheese over the wedges in the last 5 minutes of baking for an extra layer of flavor.
  9. Once done, remove the wedges from the oven and let them cool slightly. Garnish with fresh chopped parsley before serving.
