Crockpot Herb Butter Chicken and Wild Rice Delight
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1 cup wild rice blend
- 4 cups chicken broth
- 0.5 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- 1 piece lemon, zested and juiced

- optional fresh vegetables (like carrots and celery, chopped)
Instructions
- In a small bowl, mix together the softened butter, minced garlic, thyme, rosemary, lemon zest, salt, and pepper until well combined. This will be your herb butter mixture.
- Pat the chicken breasts dry with paper towels and season them lightly with salt and pepper.
- Place the wild rice blend in the bottom of the crockpot, spreading it evenly. If using, add any chopped fresh vegetables on top of the rice for added flavor and nutrition.
- Lay the seasoned chicken breasts on top of the rice and vegetables in the crockpot.
- Spoon the herb butter mixture evenly over each chicken breast, ensuring it is well coated.
- Pour the chicken broth over everything in the crockpot, covering the rice and chicken completely.
- Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and the rice is tender.
- Once done, shred the chicken directly in the crockpot using two forks, mixing it into the rice and broth for flavor.
- Stir in fresh parsley and the juice of one lemon before serving for a brightness of flavor.
