Ingredients

  • 1 large cucumber, peeled and diced
  • 0.5 cup fresh mint leaves, packed
  • 2 tablespoons honey or agave syrup
  • 2 cups cold water
  • 1 tablespoon freshly squeezed lime juice
  • as needed cubes ice
  • as needed sprigs mint for garnish
  • as needed slices cucumber for garnish

Instructions

  1. In a blender, combine the diced cucumber, fresh mint leaves, honey (or agave syrup), and cold water. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a pitcher to remove the pulp, pressing down with a spoon to extract as much liquid as possible.
  3. Stir in the freshly squeezed lime juice and mix well. Taste and adjust the sweetness if desired by adding more honey or agave.
  4. Fill glasses with ice cubes and pour the cucumber mint mixture over the ice.
  5. Garnish each glass with a sprig of mint and a slice of cucumber on the rim.
