Ingredients

  • 2 cups all-purpose flour

  • 1/2 cup unsalted butter, chilled and cubed

  • 4 large eggs
  • 1 cup cooked and crumbled breakfast sausage

  • 1/2 cup diced bell peppers (mixed colors)
  • 1/4 cup chopped green onions
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 large egg (for egg wash)

Instructions

  1. Make the Dough: In a large bowl, combine flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a skillet over medium heat, scramble the four eggs until just set. Add the cooked sausage, bell peppers, green onions, black pepper, and garlic powder. Mix until well combined and cook for another 2 minutes. Remove from heat and let the filling cool slightly. Then stir in the shredded cheddar cheese.
  3. Roll Out the Dough: On a floured surface, roll out the dough to about 1/4 inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles from the dough.
  4. Fill the Hand Pies: Place a tablespoon of the filling onto one half of each dough circle, being careful not to overfill. Fold the circle over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative finish and to ensure they are sealed well.
  5. Prepare for Baking: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Whisk the remaining egg to make an egg wash, and brush it over the tops of the hand pies for a golden finish.
  6. Bake: Place the hand pies on the prepared baking sheet and bake for 25-30 minutes, or until golden brown.
  7. Cool and Serve: Remove the hand pies from the oven and allow them to cool on a wire rack for a few minutes before serving.
