Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup French onion soup
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1 teaspoon dried thyme
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • to taste Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add a little olive oil and sauté the finely chopped onion until golden brown and caramelized, about 8-10 minutes. Add the minced garlic and sauté for an additional minute. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, cooked onions and garlic, French onion soup, Worcestershire sauce, egg, dried thyme, salt, and pepper. Mix until just combined; avoid overmixing.
  4. Gently fold in 3/4 cup of the shredded Gruyère cheese into the meat mixture for that cheesy flavor throughout.
  5. Transfer the mixture into a greased loaf pan, shaping it into a loaf form.
  6. Spread the remaining 1/4 cup of shredded Gruyère cheese evenly on top of the meatloaf.
  7. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the cheese is bubbly and golden.
  8. Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps retain its juices.
  9. Serve the slices warm, garnished with freshly chopped parsley for a pop of color.

Serve alongside creamy mashed potatoes and a simple green salad for a wholesome meal. Consider drizzling some additional French onion soup over the meatloaf slices for added flavor.
