Ingredients

  • 1 pound ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (preferably Italian-seasoned)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 1 cup marinara sauce (store-bought or homemade)
  • 4 sub rolls hoagie rolls
  • 1 cup shredded mozzarella cheese
  • for brushing Olive oil
  • optional sliced jalapeños for added heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, basil, salt, and pepper. Mix thoroughly until well combined.
  3. Shape the mixture into 1.5-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes or until they are golden brown and cooked through.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warmed through.
  6. Once the meatballs are done, remove them from the oven and allow them to cool slightly. Then, gently place them in the warm marinara sauce and coat them well.
  7. Slice the sub rolls down the center without cutting all the way through. Lightly brush the outside of the rolls with olive oil and place them on a baking sheet.
  8. Fill each sub roll with a generous amount of meatballs and sauce. Top with a handful of shredded mozzarella cheese.
  9. Broil the loaded subs in the oven for about 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning!
  10. Remove from the oven, and if desired, add sliced jalapeños on top for an added kick of flavor.

💡 Chef's Notes

Serve the meatball subs on a large platter with extra marinara sauce on the side for dipping. Garnish with fresh parsley and a sprinkle of extra Parmesan cheese for enhanced presentation. Enjoy!
