Double Cheesy Smash Burger with Special New York Sauce
Ingredients
- 1 lb ground beef (80/20 blend)
- 4 slices American cheese
- 4 slices sharp cheddar cheese
- 4 pieces brioche burger buns
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon pickle juice

- 1 tablespoon vegetable oil

Instructions
- Prepare the Special New York Sauce: In a small bowl, mix together the mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, and pickle juice. Stir until well combined, then set aside.
- Shape the Patties: Divide the ground beef into 8 equal portions (about 2 oz each). Roll each portion into a loose ball; do not compress tightly.
- Heat the Skillet: Place a large skillet or griddle over medium-high heat and add vegetable oil. Allow the oil to heat until shimmering but not smoking.
- Smash the Patties: When the skillet is hot, add 4 of the beef balls to the skillet, leaving space between them. Use a heavy spatula or a flat surface to smash each ball down into a thin patty. Season with salt and black pepper. Cook for 2-3 minutes until a nice crust forms on the bottom.
- Add Cheese: Flip each patty over and immediately place 1 slice of American cheese and 1 slice of sharp cheddar cheese on each patty. Cook for another 2-3 minutes until the cheese is melted and the patties are cooked through.
- Toast the Buns: While the patties are finishing, split the brioche buns and toast them in a separate skillet or under the broiler until golden brown.
- Assemble the Burgers: Spread a generous amount of the Special New York Sauce on each toasted bun. Place one cheesy patty on the bottom half, followed by another cheesy patty. Add lettuce and pickles, and any optional toppings you desire (like sliced tomatoes or onions).
- Finish and Serve: Top each burger with the bun lid, serve immediately, and enjoy the melted cheesy goodness!
