Ingredients

  • 8 oz pasta of your choice (penne or fusilli work well)
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 4 cup extra virgin olive oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 0 to taste Salt and black pepper
  • 0 to taste Fresh basil leaves, chopped (for garnish)
  • 0 to taste Grated parmesan cheese (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the halved cherry tomatoes, minced garlic, and olive oil. Season with salt, black pepper, and red pepper flakes. Toss everything together until well combined.
  3. Place the block of feta cheese in the center of the tomato mixture. Drizzle a little extra olive oil on top of the feta and season with black pepper.
  4. Bake in the preheated oven for 30 minutes or until the tomatoes are blistered and the feta is soft and slightly golden.
  5. While the feta and tomatoes bake, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce.
  7. Add the cooked pasta to the baking dish and toss until well coated with the feta-tomato mixture. Adjust seasoning if needed.
  8. Garnish with fresh basil and serve hot, with grated parmesan cheese on top if desired.

💡 Chef's Notes

Adjust red pepper flakes to taste for desired spiciness.
