Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 4 teaspoon salt
  • 1 2 cup unsalted butter, softened
  • 1 3 cup granulated sugar
  • 1 4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 2 cup custard or pastry cream
  • 1 2 cup dark chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once the cookies are completely cooled, use a small knife or spoon to create a well in the center of each cookie.
  9. Fill each well with a generous dollop of custard or pastry cream, allowing it to overflow slightly for that 'filled' look.
  10. In a microwave-safe bowl, combine the dark chocolate chips and heavy cream. Heat in 15-second intervals, stirring in between until the chocolate is completely melted and smooth.
  11. Drizzle the chocolate ganache over the filled cookies to finish them off, allowing it to slightly drizzle down the sides.
  12. Let the chocolate set at room temperature for about 10-15 minutes before serving.
