Easy Boston Cream Pie Cookie Bites Recipe Delight
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 4 teaspoon salt
- 1 2 cup unsalted butter, softened
- 1 3 cup granulated sugar
- 1 4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 2 cup custard or pastry cream
- 1 2 cup dark chocolate chips
- 2 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are completely cooled, use a small knife or spoon to create a well in the center of each cookie.
- Fill each well with a generous dollop of custard or pastry cream, allowing it to overflow slightly for that 'filled' look.
- In a microwave-safe bowl, combine the dark chocolate chips and heavy cream. Heat in 15-second intervals, stirring in between until the chocolate is completely melted and smooth.
- Drizzle the chocolate ganache over the filled cookies to finish them off, allowing it to slightly drizzle down the sides.
- Let the chocolate set at room temperature for about 10-15 minutes before serving.
